For the Chicken:
4 boneless, skinless chicken breasts (or thighs)
2 tbsp cornstarch
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp paprika
2 tbsp olive oil
For the Sweet Chili Sauce:
½ cup sweet chili sauce
2 tbsp soy sauce
1 tbsp honey
1 tbsp rice vinegar (or apple cider vinegar)
1 tsp sriracha (adjust to taste)
2 cloves garlic, minced
1 tsp grated ginger (optional)
1 tsp cornstarch + 1 tbsp water (for thickening)
🍽️ Directions:
1️⃣ Coat & Sear Chicken – In a bowl, mix cornstarch, salt, black pepper, garlic powder, and paprika. Toss chicken to coat. Heat olive oil in a pan over medium heat and sear chicken for 3-4 minutes per side until golden brown.
2️⃣ Make the Sauce – In a small bowl, whisk together sweet chili sauce, soy sauce, honey, vinegar, sriracha, garlic, and ginger.
3️⃣ Simmer & Thicken – Pour sauce into the pan, reduce heat to low, and let chicken cook for 8-10 minutes, flipping occasionally. Stir in cornstarch slurry and cook until the sauce thickens.
