Creamy Smothered Chicken and Rice
Hey friends I tried this cozy one-pot meal last weekend and it quickly became a family favorite. It’s simple, creamy, and perfect for busy weeknights when you want something warm and satisfying without a lot of fuss. Give it a go and let me know what you think!
Ingredients
1 tablespoon olive oil
4 skinless boneless chicken thighs or breasts
1 small onion, chopped
2 cloves garlic, minced
1 cup long-grain rice
3 cups chicken broth
1 cup half-and-half (or milk)
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
Chopped fresh parsley for garnish
Instructions
1 Heat the olive oil in a large skillet over medium heat.
2 Season the chicken on both sides with salt, pepper, and paprika.
3 Brown the chicken for about 3 minutes per side, then transfer it to a plate.
4 In the same skillet, add the onion and garlic. Cook until they’re soft and fragrant, about 2 minutes.
5 Stir in the rice and thyme, coating the grains in the onion mixture.
6 Pour in the chicken broth and half-and-half. Bring everything to a gentle simmer.
7 Nestle the chicken pieces back into the rice mixture.
8 Cover the skillet, reduce the heat to low, and let it cook for about 20 minutes, or until the rice is tender and the chicken is cooked through.
9 Remove from heat and let it rest for a couple of minutes. Sprinkle with fresh parsley before serving.
