🌿🧑 Vegan Butter Chicken: Quick & Delicious Plant-Based Version! 🌿🧑🍚

Ingredients:
- 1 block (14 oz) extra-firm tofu or 1 head cauliflower, cut into florets (396g)
- 2 tbsp olive oil or vegan butter (30ml)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 (14.5 oz) can diced tomatoes, undrained (411g)
- 1 cup coconut milk, full-fat (240ml)
- 1/4 cup vegetable broth (60ml)
- 2 tbsp vegan butter
- 1 tbsp kasuri methi (dried fenugreek leaves)
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder (adjust to taste)
- Salt to taste
- Fresh cilantro, chopped (for garnish)
- Cooked rice or naan bread, for serving

Directions:

1. Prepare Tofu or Cauliflower: If using tofu, press and cube it. If using cauliflower, cut into florets. You can roast cauliflower for extra flavor (optional - roast at 400Β°F/200Β°C for 20 mins with olive oil).
2. SautΓ© Aromatics: Heat olive oil (or vegan butter) in a large pot or Dutch oven over medium heat. Add chopped onion and cook until golden brown, about 8-10 minutes. Add minced garlic and grated ginger. Cook for another minute until fragrant.
3. Add Spices and Tomatoes: Stir in turmeric powder and red chili powder. Cook for 30 seconds until fragrant. Add diced tomatoes (undrained) and cook for 5-7 minutes, until tomatoes are cooked down.
4. Add Coconut Milk and Tofu/Cauliflower: Stir in coconut milk and vegetable broth. Add tofu cubes or cauliflower florets. Bring to a simmer and cook for 15-20 minutes, or until tofu/cauliflower is heated through and curry has thickened.
5. Finish with Butter and Methi: Stir in vegan butter and kasuri methi (dried fenugreek leaves). Simmer for another 2-3 minutes. Season with salt to taste.
6. Serve: Garnish easy vegan butter chicken with fresh cilantro. Serve hot with cooked rice or naan bread.
