Spicy Grilled Steak Rice Bowl with Chipotle Yogurt Sauce 🌶️
Ingredients:
For the Steak:
1 pound boneless, skinless beef (flank steak, skirt steak, or sirloin tip), thinly sliced
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon chili powder
For the Bowl:
1 cup cooked rice
1/2 cup chopped tomatoes
1/4 cup chopped red onion
1/4 cup chopped cilantro
For the Chipotle Yogurt Sauce:
1/2 cup plain Greek yogurt
1 tablespoon adobo sauce from canned chipotle peppers
1 clove garlic, minced
1 tablespoon lime juice
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions:
Marinate the Steak: In a bowl, combine beef with olive oil, garlic powder, onion powder, salt, pepper, and chili powder. Marinate for at least 30 minutes, or up to 2 hours.
Grill the Steak: Preheat grill to medium-high heat. Grill the steak for 2-3 minutes per side, or until cooked through.
Make the Chipotle Yogurt Sauce: In a small bowl, whisk together Greek yogurt, adobo sauce, garlic, lime juice, salt, and pepper.
Assemble the Bowls: Divide the rice among bowls. Top with grilled steak, tomato salsa, and drizzle generously with the Chipotle Yogurt Sauce.
Tips:
You can use any type of beef you like for this recipe.
For a spicier sauce, add more adobo sauce to the Chipotle Yogurt Sauce.
Serve the bowls with your favorite side dishes, such as avocado, guacamole, or a green salad.
