- 1 jalapeño pepper, thinly sliced
- ¼ cup peanuts, chopped
**Condiments:
- 3 tbsp fresh lime juice
- 1 squeeze of lime juice (from ½ lime)
- 2 tbsp honey or agave
- 1 tbsp white miso paste
**Baking & Spices:
- 3 tbsp avocado oil
- 1 pinch salt
- 1 pinch pepper
**Oils & Vinegars:
- 1 tbsp rice wine vinegar
- 1 tbsp sesame oil
- 1 drizzle chili crunch oil (to taste)

**Instructions:
1. Prepare the shrimp: Heat 2 tbsp avocado oil in a pan over medium-high heat. Season shrimp with salt and pepper, then sear for 2–3 minutes per side until pink and cooked through. Set aside.
2. Make the dressing: In a small bowl, whisk together miso paste, lime juice, honey (or agave), ginger, sesame oil, rice wine vinegar, and 1 tbsp avocado oil until smooth.
3. Assemble the salad: In a large bowl, combine watermelon, avocado, cucumber, scallions, jalapeño, and fresh herbs. Toss gently.
4. Add shrimp and dressing: Drizzle the miso-lime dressing over the salad, add the cooked shrimp, and toss lightly.
