Sweet and Tangy BBQ Beef Rice
This hearty dish combines tender beef strips glazed in a sweet and tangy BBQ sauce with fluffy rice for a comforting and flavor-packed meal. It’s perfect for busy weeknights or weekend family dinners!
Ingredients:
For the beef and sauce:
500 g (1.1 lbs) beef sirloin or flank steak, thinly sliced
2 tablespoons vegetable oil
1 small onion, thinly sliced
2 cloves garlic, minced
1/2 cup BBQ sauce (store-bought or homemade)
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon apple cider vinegar or lemon juice
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika (optional for extra flavor)
1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)
For the rice:
2 cups cooked white or jasmine rice
1 tablespoon butter or oil
1/2 teaspoon salt (to taste)
Optional: 1/2 cup chopped green onions or cooked peas for color and freshness
For garnish:
Sesame seeds
Sliced green onions
Lime wedges (optional)
Directions:
Prepare the rice: If not already cooked, prepare the rice according to package instructions. Fluff it up with a fork and stir in butter or oil and a pinch of salt. Set aside and keep warm.
Cook the beef: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef in batches (don’t overcrowd the pan) and sear for 2-3 minutes on each side until browned. Remove and set aside.
Sauté aromatics: In the same pan, add the sliced onion and cook for 2 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
Make the sauce: Reduce heat to medium-low. Pour in the BBQ sauce, honey, soy sauce, apple cider vinegar (or lemon juice), black pepper, and smoked paprika. Stir well and simmer for 1-2 minutes.
Thicken and combine: Stir in the cornstarch slurry and continue to cook for another 1-2 minutes until the sauce thickens slightly. Return the cooked beef to the pan and toss to coat evenly in the sauce. Cook for 1 more minute so everything is heated through.
Assemble and serve: Spoon the warm rice onto plates or bowls. Top with the sweet and tangy BBQ beef. Garnish with sesame seeds and green onions. Add a squeeze of lime if desired for an extra zing!
