🧂 Ingredients:
For the Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
Salt & pepper to taste
Juice of 1/2 lime
For the Rice:
1 cup jasmine or basmati rice
2 cups water
Pinch of salt
Fresh parsley or cilantro for garnish
For the Cucumber Salad:
1 cup sliced cucumber
1/2 cup cherry tomatoes, halved
1 tbsp olive oil
1 tsp lemon or lime juice
Salt & black pepper
Fresh parsley or cilantro
Optional: pinch of chili flakes
👨🍳 Instructions:
Season the chicken breasts with olive oil, garlic powder, paprika, salt, pepper, and lime juice. Grill or pan-fry for about 5–6 minutes per side until golden brown and fully cooked. Meanwhile, bring water to a boil with a pinch of salt, add rice, reduce heat, cover, and simmer until fluffy (about 15 minutes). For the salad, toss cucumber and cherry tomatoes with olive oil, lime juice, salt, pepper, and herbs. Serve the sliced chicken with rice, salad, and a lime wedge for extra zest!
