๐ Ingredients:
1 cup canned chickpeas, drained & rinsed ๐ง
1 small zucchini, diced ๐ฅ
1 cup broccoli florets ๐ฅฆ
2 tbsp olive oil ๐ซ
1 tsp smoked paprika ๐ถ
1/2 tsp garlic powder ๐ง
1/2 tsp cumin ๐ฟ
Salt & black pepper to taste ๐ง
4 tbsp hummus ๐ฅฃ
๐ฅ Instructions:
Preheat oven to 200ยฐC (400ยฐF). Line a baking sheet with parchment paper.
Season the veggies & chickpeas: Toss chickpeas, zucchini, and broccoli separately with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.
Roast: Spread everything on the baking sheet and bake for 20โ25 minutes, flipping halfway through, until crispy and golden brown.
Assemble the bowl: Arrange the roasted chickpeas, zucchini, and broccoli in a bowl. Add a scoop of hummus in the center.
