For the Coconut Curry Sauce:

Bell peppers (sliced) 🫑

Mix meatball ingredients and form into balls. Sear in a pan until browned and cooked through. Remove and set aside. In the same pan, sauté garlic, ginger, and curry paste until fragrant. Stir in coconut milk and bring to a simmer. Add bell peppers, peas, and meatballs. Let everything simmer until the sauce is rich and flavorful. Serve over jasmine rice and top with fresh herbs and lime juice for brightness.
