Creamy Tuscan Salmon with Spinach and Cherry Tomatoes 🥬🍅🐟✨
Ingredients:
- 4 salmon fillets (skin-on or skinless)
- 2 tablespoons olive oil
- Salt and pepper to taste
For the sauce:
- 2 tablespoons butter
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 teaspoon dried Italian seasoning
- 2 cups fresh baby spinach
- 1 cup cherry tomatoes, halved
- 1 tablespoon fresh parsley or basil (optional, for garnish)
Directions:
1. Cook the salmon: Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium heat. Sear salmon for 4-5 minutes per side, or until cooked through. Remove salmon from the skillet and set aside.
2. Prepare the sauce: In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
3. Pour in the heavy cream and stir in parmesan cheese and Italian seasoning. Simmer for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
4. Add veggies: Toss in the spinach and cherry tomatoes. Cook for 2-3 minutes until the spinach wilts and the tomatoes soften.
5. Combine and serve: Return the salmon fillets to the skillet, spooning the creamy sauce over the top. Let everything simmer together for 1-2 minutes.
6. Garnish with fresh parsley or basil and serve with rice, pasta, or crusty bread.
