For the Chicken:
2 chicken breasts, butterflied π
2 tbsp olive oil π«
Juice of 1 lemon π
2 garlic cloves, minced π§

For the Quinoa:
1 cup quinoa, cooked π
1/2 tsp salt π§
1 tbsp olive oil π«
For the Greek Salad:
1 cucumber, diced π₯
2 tomatoes, diced π
1/2 red onion, finely chopped π§
1/4 cup kalamata olives, sliced π«
100 g feta cheese, crumbled π§
1 tbsp olive oil π«
1 tsp red wine vinegar π·
1/2 tsp oregano πΏ
Salt & black pepper to taste π§

Marinate the Chicken: Mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Coat the chicken and let it marinate for at least 15 minutes.
Cook the Quinoa: Cook quinoa according to package instructions, then mix with olive oil and salt.
