Mediterranean Baked Fish with Tomatoes and Capers
Ingredients
- 4 white fish fillets (such as cod, snapper, or tilapia)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Juice of 1 lemon
- Zest of 1 lemon
- Salt and pepper, to taste
Directions
1. Prepare the Oven and Baking Dish:Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
2. Season the Fish:Pat the fish fillets dry with paper towels and arrange them in the prepared baking dish. Season both sides of the fillets with salt and pepper.
3. Make the Marinade:In a small bowl, combine olive oil, minced garlic, oregano, paprika, lemon zest, and lemon juice. Mix well and drizzle the marinade evenly over the fish fillets.
4. Add Vegetables:Scatter the halved cherry tomatoes, sliced Kalamata olives, and red onion around the fish in the baking dish.
5. Bake the Fish*:Bake in the preheated oven for 15–20 minutes, or until the fish is opaque and flakes easily with a fork.
6. Garnish and Serve:Sprinkle fresh parsley over the baked fish before serving. Serve hot with crusty bread, steamed rice, or roasted vegetables for a complete Mediterranean-inspired meal.
