Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup (1 stick) unsalted butter, softened
3/4 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
3 ripe bananas, mashed (about 1 1/2 cups)
1/2 cup plain Greek yogurt or sour cream
1/2 cup chopped walnuts or pecans (optional)
Directions:
Stage 1: Prepare Batter
Preheat your oven to 350Β°F (175Β°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
In a large bowl, cream the butter and brown sugar until light and fluffy.
Beat in the eggs, one at a time, then stir in the vanilla extract.
Mix in the mashed bananas and Greek yogurt until well combined.
Stage 2: Combine and Bake
Gradually fold the dry ingredients into the wet ingredients, stirring just until combined.
Gently fold in the nuts if using.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
