Chicken And Yellow Rice
You don’t have to pay extra money for yellow rice, make your own at home. Just purchase a bottle of Turmeric which is on your spice aisle. Not only can you make your own yellow rice, but it is very good for you too.
~~Ingredients~~
4 quarts (16 cups) water approx. (enough to cover chicken)
4 lb. (approx.) whole chicken
3-4 stalks celery; rough chopped
1 large onion; diced
1/2 green or red bell pepper, chopped
2 teaspoons turmeric
1 teaspoon pepper
1 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon celery salt
1 1/2 teaspoons parsley – divided
2 cups white rice
1 can Cream of chicken condensed soup
3 tablespoons butter
~~Instructions~~
In a large stock pot bring water, chicken, 1 teaspoon pepper and 1 teaspoon salt to boil, cover and reduce to a simmer for at least 1 hour (2-3 hours would be even better).
Once simmering is complete, remove chicken to cool in order to debone. Let broth continue to simmer and reduce.
When cool enough to handle, debone chicken.
In another pot, over medium high heat, add the butter, celery, onions, bell pepper, and seasonings. Sauté for 4 to 5 minutes. Add the rice to the mixture and sauté for another 2 - 3 minutes.
Remove 5 cups of your chicken broth and add the cream of chicken to the broth. Stir with a whisk to completely dissolve cream of chicken. Increase the heat to high on your rice and vegetables. Add your broth mixture to your rice mixture. Bring to a boil, stir, cover and simmer for 20 minutes.
While the rice is cooking , debone your chicken. When the rice is done, add the chicken to the pot with the rice, but don’t stir. Turn off heat and let sit for 10-15 minutes. Fluff with a fork to mix chicken in, taste and season with salt and pepper to your liking. Make sure you taste it first as the can of condensed soup has salt in it also.
Note..
Any left over chicken broth can be frozen for later use.
