Ingredients

For the Rice 🍚:
2 cups cooked white or brown rice 🍚
For the Veggies 🥗:
1 cup cherry tomatoes, halved 🍅
1 cup cucumber slices 🥒
1 cup arugula or mixed greens 🥬
For the Tzatziki Sauce 🥣:
1 cup Greek yogurt 🥛
1 cucumber, grated and squeezed to remove excess water 🥒
1 clove garlic, minced 🧄
1 tbsp olive oil 🫒
1 tbsp lemon juice 🍋
1 tbsp fresh dill, chopped 🌿
Salt & pepper to taste 🧂
Instructions
