Beef Massaman Curry

Ingredients:
For the Beef Curry:
1 ½ lbs beef chuck, cut into 1-inch cubes
2 tablespoons vegetable oil
1 large onion, diced
3 cloves garlic, minced
1-inch piece of ginger, minced
3 tablespoons Massaman curry paste
1 can (14 oz) coconut milk
2 cups beef broth
2 medium potatoes, peeled and cubed
1 cup carrots, sliced
1 cup peanuts or cashews, roasted
1 tablespoon fish sauce
1 tablespoon brown sugar
1-2 tablespoons tamarind paste (optional, for tanginess)
Salt, to taste
Fresh cilantro, for garnish
Lime wedges, for serving
Instructions:
1. Sear the Beef:
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
Add the beef cubes and sear them on all sides until browned. Remove the beef from the pot and set aside.
2. Sauté Aromatics:
In the same pot, add the diced onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.
3. Add Curry Paste:
Add the Massaman curry paste to the pot and cook for 2-3 minutes, stirring frequently until the paste is well combined with the onions.
4. Incorporate Liquids:
Pour in the coconut milk and beef broth, stirring to combine. Return the browned beef to the pot.
5. Simmer the Curry:
Bring the mixture to a gentle simmer. Cover and cook for about 1 hour, stirring occasionally.
6. Add Vegetables:
After an hour, add the cubed potatoes, sliced carrots, fish sauce, brown sugar, and tamarind paste (if using). Stir well and continue to simmer for another 30-45 minutes until the beef is tender and the vegetables are cooked through.
7. Finish and Serve:
Once the curry is ready, taste and adjust the seasoning with salt, more fish sauce, or sugar as needed.
Stir in the roasted peanuts or cashews before serving.
Garnish with fresh cilantro and serve with lime wedges on the side.
