🥗 Avocado, Egg, and Corn Salad Bowl
Ingredients:
2 hard-boiled eggs, sliced 🥚
1 avocado, sliced 🥑
1/2 cup cherry tomatoes, halved 🍅
1/4 cup sweet corn kernels 🌽
1/4 cup diced red onion 🧅
1/4 cup diced green bell pepper 🫑
Fresh cilantro, chopped 🌿
1 tbsp crumbled feta cheese 🧀
Paprika or chili powder for garnish 🌶️
Salt and black pepper to taste 🧂
Drizzle of olive oil 🫒
Squeeze of lime juice 🍋
Instructions:
Prepare the Ingredients: Slice the boiled eggs and avocado. Halve the cherry tomatoes. Dice the onion and green bell pepper.
Assemble the Bowl: Start by arranging the eggs, avocado, cherry tomatoes, corn, onion, and bell pepper in sections within a bowl.
Add Cheese and Seasoning: Sprinkle crumbled feta cheese, paprika, salt, and black pepper over the top.
Finish with Garnish: Drizzle olive oil and lime juice over the salad and garnish with chopped cilantro.
Optional Additions:
A handful of cooked edamame beans for extra protein 🫘
Cooked quinoa or brown rice as a base 🍚
