๐งพ Ingredients:
For the Chicken:
2 chicken breasts, cubed
1 tbsp olive oil
1 tsp garlic powder
Salt & black pepper to taste
Juice of 1/2 lemon ๐
For the Rice:
1 cup basmati or jasmine rice
2 cups water
Pinch of turmeric or saffron (optional for color)
Salt to taste
Garlic Herb Yogurt Sauce:
150g plain Greek yogurt
1 small garlic clove, minced
1 tbsp fresh parsley, chopped
1 tbsp lemon juice
Salt & pepper to taste
๐จโ๐ณ Instructions:
Marinate chicken with olive oil, garlic powder, salt, pepper, and lemon juice. Set aside while preparing the rice.
Cook rice in water with salt and optional turmeric or saffron. Fluff with a fork once cooked.
Grill chicken in a hot pan for about 8โ10 minutes until golden and fully cooked.
Mix the yogurt sauce ingredients in a small bowl until smooth and creamy.
To serve, layer rice in bowls, top with grilled chicken pieces, a generous spoon of the yogurt sauce, and fresh parsley. Add a lemon wedge for extra zing!
