Garlic Herb Chicken with Quinoa Rice & Roasted Veggies 🥦
A healthy, high-protein meal packed with flavor and nutrients!
📝 Ingredients:
For the Chicken:
1 chicken breast, sliced
1 tbsp olive oil
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp salt
1/4 tsp black pepper
For the Rice:
1/2 cup brown rice
1/4 cup quinoa
1 cup water or broth
1/4 tsp salt
For the Roasted Veggies:
6-8 asparagus spears
1/2 cup broccoli florets
1 tbsp olive oil
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1 tbsp grated Parmesan (optional)
🍽️ Directions:
1️⃣ Cook the Chicken:
Rub chicken with olive oil, paprika, garlic powder, oregano, salt, and pepper.
Heat a pan over medium-high heat and cook for 5-7 minutes per side until golden brown and cooked through.
Let rest for 5 minutes, then slice.
2️⃣ Prepare the Rice & Quinoa:
Rinse quinoa and brown rice under cold water.
Cook in water or broth with salt for 15-20 minutes, or until tender.
3️⃣ Roast the Vegetables:
Preheat oven to 400°F (200°C).
Toss asparagus and broccoli with olive oil, garlic powder, salt, and pepper.
Roast for 15-18 minutes, until tender.
Sprinkle with Parmesan for extra flavor!
4️⃣ Assemble & Serve:
Plate the quinoa rice, chicken, and roasted veggies together.
Garnish with fresh herbs or a squeeze of lemon for a fresh finish! 🍋
