It's a quick, economic meal that really stretches a pound of ground beef
Ingredients:
1 lb ground beef
1 small onion, diced
1 cup uncooked white rice
2 ½ cups beef broth
1 cup frozen peas and carrots
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
Directions:
In a large skillet, brown the ground beef with the diced onion. Drain excess fat.
Stir in garlic powder, paprika, salt, and pepper.
Add rice and pour in beef broth. Bring to a boil.
Reduce heat to low, cover, and simmer for 18–20 minutes.
Stir in frozen vegetables and cook for another 5 minutes until everything is hot and the rice is tender.
Fluff with a fork and serve.
