Ingredients
2 lbs beef stew meat (cut into cubes)
2 tablespoons vegetable oil
1 onion (chopped)
4 cloves garlic (minced)
1 tablespoon ginger (minced)
2 tablespoons curry powder (adjust to taste)

2 cups beef broth
2 large potatoes (peeled and cubed)
1 bell pepper (chopped)
1-2 scotch bonnet peppers (whole, adjust to taste)

Instructions
1. Sauté Aromatics
Heat Oil: In a large pot, heat vegetable oil over medium-high heat.
Cook Onion, Garlic, and Ginger: Add chopped onion, garlic, and ginger, sautéing until the onion is translucent.
2. Brown the Beef
Add Beef: Stir in the beef cubes, browning on all sides (about 5-7 minutes).
Add Spices: Sprinkle in curry powder and allspice, cooking for another minute to release the flavors.
3. Add Liquid and Vegetables
