Egg Roll in a Bowl
Ingredients:
1 pound ground pork or turkey
1 tablespoon sesame oil
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 teaspoon ginger, minced
3 cloves garlic, minced
4 cups coleslaw mix (cabbage and carrots)
1/4 cup green onions, sliced
1 tablespoon sriracha (optional)
Salt and pepper to taste
Sesame seeds for garnish (optional)
1. In a large skillet or wok, heat the sesame oil over medium heat. Add the ground pork or turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
2. Stir in the minced ginger and garlic, cooking for an additional 1-2 minutes until fragrant.
3. Add the coleslaw mix to the skillet and stir well to combine. Cook for about 3-5 minutes until the cabbage is tender.
4. Pour in the soy sauce and rice vinegar, mixing thoroughly. Season with salt, pepper, and sriracha if using. Cook for another 2-3 minutes.
5. Remove from heat and stir in the sliced green onions. Serve hot, garnished with sesame seeds if desired.
