Keto Peanut Butter Chocolate Bars
Ingredients
Peanut Butter Base Layer:
1 cup natural peanut butter (unsweetened, creamy)
½ cup almond flour
⅓ cup melted butter (unsalted)
½ cup powdered erythritol (or monk fruit sweetener)
1 tsp vanilla extract
Chocolate Topping:
1 cup sugar-free chocolate chips (like Lily’s)
2 tbsp coconut oil or butter
Instructions
Prepare the Peanut Butter Layer
In a mixing bowl, combine peanut butter, almond flour, melted butter, erythritol, and vanilla.
Stir until smooth and well mixed.
Spread evenly into an 8x8 baking dish lined with parchment paper.
Make the Chocolate Topping
In a microwave-safe bowl, melt chocolate chips with coconut oil in 20-second intervals, stirring until smooth.
Pour over the peanut butter layer and spread evenly.
Chill & Set
Place in the fridge for at least 2 hours, or until firm.
Slice into squares or bars and enjoy!
