🛒 Ingredients:
🍚 1 cup cooked white rice (basmati or jasmine)
🍗 1 large boneless, skinless chicken breast
🫒 1/4 cup Kalamata olives
🫒 1/4 cup green olives
🥒 1/2 cucumber, thinly sliced
🧄 1/2 cup canned chickpeas, drained and rinsed
🥛 1/3 cup tzatziki sauce (store-bought or homemade)
🌿 2 tbsp fresh dill, chopped (plus extra for garnish)
🧂 Salt and pepper to taste
🫙 1 tbsp olive oil
🍋 Optional: pinch of lemon zest or a squeeze of lemon juice
👩🍳 Instructions:
Marinate & Grill the Chicken:
Season the chicken breast with salt, pepper, olive oil, and a sprinkle of fresh dill. Grill or pan-sear over medium-high heat for 6–7 minutes per side, until cooked through and slightly charred. Rest, then slice.
Cook the Rice:
Prepare 1 cup of white rice according to package instructions. Once done, fluff with a fork and mix with half of the chopped dill.
Prepare the Bowl:
In a shallow bowl, add a scoop of dill rice. Arrange sliced grilled chicken, cucumber rounds, chickpeas, Kalamata and green olives on top.
Add Tzatziki & Garnish:
Spoon tzatziki sauce in the center. Sprinkle with the remaining dill and optional black pepper or lemon zest.
Serve Fresh:
Enjoy immediately while the chicken is warm and the veggies are fresh and crisp!
