No-Bake Salted Caramel Pretzel Bites
Ingredients:
- 2 cups mini pretzels
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 20 soft caramel squares, unwrapped
- 2 tablespoons milk or cream
- 2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil
- Flaky sea salt for topping
Directions:
1. Line a baking sheet with parchment paper and set aside.
2. In a medium bowl, combine the creamy peanut butter and powdered sugar until smooth and well mixed.
3. Place a mini pretzel on the parchment-lined baking sheet and top with about a teaspoon of the peanut butter mixture. Repeat with remaining pretzels.
4. In a microwave-safe bowl, combine the caramel squares and milk or cream. Microwave in 30-second intervals, stirring in between, until melted and smooth.
5. Spoon a small amount of the melted caramel onto each peanut butter-topped pretzel.
6. Chill the pretzel bites in the refrigerator for about 15 minutes to set the caramel.
7. In another microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
8. Using a fork or toothpick, dip each pretzel bite into the melted chocolate, allowing excess to drip off.
9. Place the dipped pretzel bites back on the parchment paper and sprinkle with flaky sea salt.
10. Refrigerate for at least 30 minutes until the chocolate is set.
