Teriyaki Chicken Avocado Rice Stack
A flavorful and healthy meal.
Ingredients:
For the chicken:
1 pound boneless, skinless chicken breasts, thinly sliced
1/4 cup teriyaki sauce
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 clove garlic, minced
1/4 teaspoon red pepper flakes (optional)
For the rice:
1 cup brown rice
2 cups vegetable broth
1/4 teaspoon salt
For the avocado:
1 avocado, sliced
For the sesame seeds:
1/4 cup sesame seeds, toasted
Instructions:
Marinate chicken: In a bowl, combine teriyaki sauce, soy sauce, rice vinegar, garlic, and red pepper flakes. Add chicken and marinate for at least 30 minutes, or up to 2 hours.
Cook chicken: Grill or pan-fry steak until browned.
Cook rice: Bring vegetable broth to a boil in a pot. Add rice and salt. Reduce heat, cover, and simmer for 15-20 minutes, or until tender.
Prepare avocado: Slice avocado.
Assemble: Layer rice, grilled chicken, avocado, and sesame seeds in a bowl.
Serve: Serve immediately and enjoy!
Tips:
For a spicier dish, add more red pepper flakes to the marinade.
You can substitute the sirloin steak with other cuts of beef, such as flank steak or skirt steak.
