🌿 Greek Meatballs with Orzo and Cherry Tomatoes 🍅🍖

🛒 Ingredients:
For the Meatballs:
500 g ground beef 🐄
1 egg 🥚
2 tbsp breadcrumbs
1 garlic clove, minced 🧄
1 tsp dried oregano
Salt & pepper 🧂
1 tbsp olive oil for frying 🫒
For the Orzo:
200 g orzo pasta (rice-shaped pasta) 🍚
250 g cherry tomatoes, halved 🍅
2 tbsp olive oil 🫒
1 shallot, finely chopped
2 garlic cloves, minced
500 ml vegetable broth 🥣
Fresh basil 🌿
50 g crumbled feta cheese 🧀
👩🍳 Instructions:
Mix all the meatball ingredients, shape into small balls, and fry in olive oil until golden brown all over. Remove and set aside. In the same pan, sauté the shallot and garlic until soft, then add orzo and cherry tomatoes. Pour in the vegetable broth and simmer on medium heat for about 10–12 minutes until the pasta is tender. Return the meatballs to the pan, warm them through, and top with crumbled feta and fresh basil before serving.
Tip: For a creamier twist, stir in a spoonful of cream cheese at the end. A squeeze of lemon juice also adds a refreshing kick 🍋.
