Ingredients:
- 1 lb salmon fillets, cut into bite-sized cubes
- 2 tablespoons olive oil or sesame oil
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup carrots, julienned
- 1/2 red onion, sliced
- 2 green onions, chopped (for garnish)
- 1 tablespoon sesame seeds (optional, for garnish)
- Salt and pepper to taste
**For the Sauce:**
- 3 tablespoons soy sauce (low sodium)
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch (optional, for thickening)
Directions:
1. In a small bowl, whisk together soy sauce, honey, garlic, ginger, rice vinegar, and cornstarch. Set aside.
2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the salmon cubes, season lightly with salt and pepper, and cook for 3-4 minutes, flipping gently until golden and cooked through. Remove salmon and set aside.
3. In the same skillet, add the remaining oil. Sauté the red bell pepper, carrots, broccoli, and red onion for 4-5 minutes, or until just tender.
4. Pour the prepared sauce into the skillet and stir well to coat the vegetables. Cook for 1-2 minutes until the sauce thickens slightly.
5. Gently return the salmon to the skillet and toss carefully to coat with the sauce and vegetables.
6. Garnish with chopped green onions and sesame seeds. Serve hot over rice or noodles.
