Steak Bites with Chimichurri

Ingredients:

1.5 lbs sirloin steak, cut into 1-inch cubes
1 tbsp olive oil

1/2 tsp garlic powder
1/4 tsp onion powder

For the Chimichurri Sauce:

1 cup packed fresh parsley leaves
1/2 cup packed fresh cilantro leaves
1/4 cup red wine vinegar
1/4 cup olive oil
2 cloves garlic, minced
1/2 tsp red pepper flakes (optional)
1/4 tsp salt
1/4 tsp black pepper

Instructions:

1. Prepare the steak: In a medium bowl, combine the cubed sirloin steak with 1 tablespoon of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1/2 teaspoon of garlic powder, and 1/4 teaspoon of onion powder. Toss to coat the steak cubes evenly. Let the steak marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
