Lemon Herb Chicken Bowl with Roasted Vegetables & Tahini Dressing

Ingredients:

For the Roasted Vegetables:

1 medium red onion, cut into wedges
1 medium yellow bell pepper, cored, seeded, and chopped
1 medium zucchini, chopped
1 cup broccoli florets
2 carrots, peeled and chopped
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon salt
¼ teaspoon black pepper

For the Lemon Herb Chicken:

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon olive oil
1 lemon, zested and juiced
2 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh parsley, chopped
½ teaspoon salt
¼ teaspoon black pepper

For the Tahini Dressing:

¼ cup tahini
2 tablespoons lemon juice
2 tablespoons water
1 tablespoon olive oil
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon black pepper

For the Bowl:

1 cup cooked quinoa or brown rice (or other grain of your choice)

Instructions:

1. Roast the Vegetables: Preheat oven to 400°F (200°C). In a large bowl, toss the red onion, bell pepper, zucchini, broccoli, and carrots with 2 tablespoons olive oil, oregano, thyme, salt, and pepper. Spread in a single layer on a baking sheet. Roast for 20-25 minutes, or until tender and slightly browned, flipping halfway through.

2. Prepare the Chicken: While the vegetables are roasting, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides. Add the lemon zest, lemon juice, minced garlic, rosemary, parsley, salt, and pepper. Cook for another 5-7 minutes, or until the chicken is cooked through and no longer pink inside.

3. Make the Tahini Dressing: In a small bowl, whisk together the tahini, lemon juice, water, olive oil, minced garlic, salt, and pepper until smooth and creamy. Add more water, 1 teaspoon at a time, if needed to reach desired consistency.

4. Assemble the Bowls: Divide the cooked quinoa or rice among bowls. Top with the roasted vegetables and lemon herb chicken. Drizzle generously with the tahini dressing. Serve immediately and enjoy!
