Chinese Chicken Salad
Ingredients:
2 cups cooked chicken, shredded
4 cups Napa cabbage, shredded
1 cup red cabbage, shredded
1 cup carrots, julienned
½ cup green onions, chopped
½ cup sliced almonds, toasted
1 cup crispy chow mein noodles
¼ cup sesame seeds (optional)
Dressing:
¼ cup soy sauce
2 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp honey or sugar
1 tsp grated ginger
1 clove garlic, minced
½ tsp black pepper
Instructions:
In a large bowl, combine chicken, Napa cabbage, red cabbage, carrots, and green onions.
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, garlic, and black pepper.
Pour the dressing over the salad and toss to combine.
Top with toasted almonds, crispy chow mein noodles, and sesame seeds.
Serve immediately and enjoy!
