Ingredients
For the Chicken:
🍗 Chicken Breast: 1 lb, boneless and skinless
🧄 Garlic: 3 cloves, minced
🌿 Dried Oregano: 1 tsp
🍋 Lemon Juice: 2 tbsp
🛢️ Olive Oil: 2 tbsp
🧂 Salt & Pepper: to taste
For the Bowl:
🍚 Brown Rice: 1 cup, cooked
🥒 Cucumber: 1, thinly sliced
🥬 Lettuce Leaves: 2 cups, roughly chopped
🌿 Fresh Parsley: 2 tbsp, chopped
Directions
Marinate the Chicken:
In a bowl, mix garlic, oregano, lemon juice, olive oil, salt, and pepper. Add the chicken and coat well. Marinate for at least 15 minutes.
Cook the Chicken:
Heat a grill pan or skillet over medium heat. Cook the chicken for 4-5 minutes on each side until golden and fully cooked. Let it rest for 5 minutes, then slice into strips.
Assemble the Bowl:
Divide the cooked brown rice, lettuce, and cucumber into 4 bowls. Top with the grilled chicken slices.
Garnish & Serve:
Sprinkle with fresh parsley and a drizzle of olive oil or lemon juice if desired. Serve warm and enjoy!
