How to make a super yummy Royal Bibingka. Bibingka commonly refers to a type of baked rice cake from the Philippines lined with banana leaves and is usually eaten for breakfast or as snack.
Here's what you'll need:
2 large eggs
1/2 cup sugar (100g)
1 and half cup coconut cream or milk (375ml)
3 tbsp melted butter (45ml) (unsalted)
1/2 tsp salt (3g)
1 tbsp baking powder (8g)
1 and a half cup glutinous rice flour (190g)
1 cup rice flour (125g)
3/4 cup coconut/macapuno strings.
1. Preheat oven at 180C/350F. In a bowl, mix together eggs, sugar, coconut cream, melted butter, salt and baking powder. Then sift in glutinous rice flour and plain rice flour. Mix until smooth.
2. Add macapuno/coconut strings. Mix.
3. Line a 4 inches mold with banana leaves. Divide batter equally to 6 large mold or 12 medium sized mold.
4. Top with grated cheese. Bake for 25 minutes or until light golden.
5. Serve and enjoy!
