🍲 Cozy Chicken and Rice Soup
Ingredients:
2 tbsp olive oil
1 medium onion, diced
2 carrots, peeled and sliced
2 celery stalks, sliced
3 garlic cloves, minced
1 lb boneless, skinless chicken breasts or thighs
1 cup long grain white rice
8 cups chicken broth
1 tsp dried thyme
1 tsp dried parsley
Salt and pepper, to taste
Optional: squeeze of lemon juice or fresh parsley for garnish
Instructions:
1️⃣ Sauté Vegetables:
In a large pot, heat olive oil over medium heat.
Add onion, carrots, and celery. Cook until vegetables are softened, about 5–6 minutes. Add garlic and cook for another minute.
2️⃣ Add Chicken and Seasoning:
Place the chicken into the pot. Add thyme, parsley, salt, and pepper.
Pour in the chicken broth and bring to a boil.
3️⃣ Simmer the Soup:
Reduce heat to low, cover, and simmer for 20–25 minutes, or until the chicken is fully cooked and tender.
4️⃣ Shred Chicken:
Remove the chicken, shred it with two forks, and return it to the pot.
5️⃣ Add Rice:
Stir in rice and simmer uncovered for another 15–18 minutes, until rice is tender. Add more broth if needed for desired consistency.
6️⃣ Finish and Serve:
Taste and adjust seasoning. Add a splash of lemon juice if desired. Serve warm.
