Chicken Tzatziki Bowls
Inspired by the fresh and vibrant flavors of Greek cuisine, Chicken Tzatziki Bowls combine grilled chicken with a refreshing tzatziki sauce, creating a perfect blend of tangy, creamy, and savory. 1 ½ pounds boneless, skinless chicken breasts or thighs
¼ cup olive oil
3 tablespoons lemon juice
3 cloves garlic, minced
2 teaspoons smoked paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
Salt and pepper to taste
2 cups cooked basmati rice
1 cup cherry tomatoes, halved
1 cucumber, diced
¼ cup red onion, finely chopped
¼ cup fresh parsley, chopped
¼ cup Kalamata olives, pitted and sliced
¼ cup crumbled feta cheese
1 cup Greek yogurt
1 cucumber, grated and excess water squeezed out
1 clove garlic, minced
1 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon dried dill or 1 tablespoon fresh dill, chopped
Salt and pepper to taste
Directions:
1. In a bowl, whisk together olive oil, lemon juice, garlic, smoked paprika, cumin, oregano, salt, and pepper. Add chicken and marinate for at least 30 minutes.
2. Preheat a grill or skillet. Cook chicken for 5-7 minutes per side, until the internal temperature reaches 165°F. Slice into strips.
3. Mix together Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, salt, and pepper to make the tzatziki. Chill until serving.
4. In bowls, layer rice, chicken, cherry tomatoes, cucumber, onion, parsley, olives, and feta. Drizzle with tzatziki.
5. Serve immediately, garnished with fresh parsley or dill if desired.
