👨🍳 Instructions
1. Prep and Marinate the Wings:
Pat the chicken wings dry with paper towels. Dry wings = crispy skin!
In a large bowl, toss wings with soy sauce, fish sauce (if using), garlic powder, salt, pepper, and cornstarch.
Let marinate for 30 minutes (or up to 2 hours in the fridge for deeper flavor).
2. Bake or Air Fry the Wings:
Oven Method:
Preheat oven to 425°F (220°C).
Line a baking sheet with foil or parchment and place a wire rack on top.
Arrange wings in a single layer. Brush lightly with vegetable oil.
Bake for 35–40 minutes, flipping halfway, until golden and crispy.
Air Fryer Method:
Preheat air fryer to 390°F (200°C).
Arrange wings in a single layer (you may need to cook in batches).
Air fry for 22–25 minutes, shaking halfway through.
3. Make the Mango Coconut Sauce:
In a blender or food processor, combine mango, coconut milk, honey, soy sauce, vinegar/lime juice, garlic, ginger, and chili.
Blend until smooth.
Pour into a small saucepan over medium heat.
Bring to a simmer and stir in cornstarch slurry to thicken.
Let simmer for 2–3 minutes until glossy and sticky. Set aside.
4. Coat the Wings:
Once the wings are cooked, transfer them to a large bowl.
Pour the warm mango coconut sauce over the wings.
Toss to coat until they are sticky and glistening. ✨
