Chewy Peanut Butter Butterfinger Cookies
Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1 cup creamy peanut butter
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped Butterfinger candy bars
Directions:
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
Beat in the eggs, one at a time, mixing well after each addition. Add vanilla extract and mix until combined.
Add peanut butter and beat until the mixture is smooth and fully incorporated. Scrape down the sides of the bowl as needed.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients on low speed until just combined. Do not overmix.
Gently fold in the chopped Butterfinger candy, distributing evenly through the dough.
Scoop dough onto the prepared baking sheets, spacing each cookie about 2 inches apart.
Bake for 10–12 minutes, or until the edges are golden brown and the centers look slightly underbaked.
Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
