Ingredients

1 lb shrimp (peeled & deveined) 🍤
1 can (13.5 oz) coconut milk 🥥
4 cups chicken or veggie broth
6 oz rice noodles 🍜
2 tbsp red curry paste 🌶️
1 tbsp fish sauce
1 tbsp soy sauce
1 bell pepper, sliced 🫑
1 cup mushrooms (optional)
1 tbsp ginger, grated
2 cloves garlic, minced
Juice of 1 lime
Fresh cilantro & green onions for garnish 🌿

Directions

In a large pot, sauté garlic & ginger in a bit of oil until fragrant.
Add curry paste and cook 1 minute.
Pour in broth and coconut milk. Bring to a simmer.
Add soy sauce, fish sauce, and veggies. Cook 5–7 mins.
Toss in shrimp and cook until pink, 3–4 mins.
Add rice noodles and cook until tender (as per package).
Stir in lime juice, garnish, and serve hot!
