Braised Fish Recipe
Ingredients:
4 pieces of fish fillets (such as cod, tilapia, or salmon)
1 cup vegetable broth
1/2 cup diced tomatoes (canned or fresh)
1 onion, finely chopped
2 cloves garlic, minced
1 bell pepper, sliced
1 teaspoon paprika
1 teaspoon dried oregano
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley for garnish
Directions:
Begin by heating the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until they become translucent and fragrant.
Next, incorporate the sliced bell pepper into the skillet, cooking for an additional 3-4 minutes until softened. Stir in the diced tomatoes, vegetable broth, paprika, oregano, salt, and pepper, allowing the mixture to come to a gentle simmer.
Carefully place the fish fillets into the skillet, ensuring they are submerged in the braising liquid. Cover the skillet and let the fish cook for about 10-15 minutes, or until the fish flakes easily with a fork.
Once cooked, remove the skillet from heat and garnish the dish with freshly chopped parsley before serving. This dish pairs wonderfully with rice or crusty bread to soak up the delicious sauce.
