Cajun Steak & Shrimp with Yellow Rice
Ingredients:
For the Cajun Steak & Shrimp:
2 ribeye or sirloin steaks
½ lb large shrimp, peeled and deveined
2 tbsp Cajun seasoning
1 tbsp olive oil
2 tbsp butter
3 garlic cloves, minced
1 tsp smoked paprika
½ tsp salt
½ tsp black pepper
1 tbsp fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
For the Yellow Rice:
1 cup long-grain rice
2 cups chicken broth
½ tsp turmeric
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
1 tbsp butter
Directions:
Prepare the Yellow Rice: In a saucepan, bring chicken broth to a boil. Stir in rice, turmeric, garlic powder, onion powder, salt, and butter. Reduce heat, cover, and simmer for 15-18 minutes, until the rice is tender and fluffy. Remove from heat and set aside.
Season the Steak & Shrimp: Pat the steaks dry and season both sides with 1 tbsp of Cajun seasoning, smoked paprika, salt, and black pepper. Toss the shrimp in a bowl with the remaining Cajun seasoning.
Cook the Steak: Heat olive oil in a skillet over medium-high heat. Add the steaks and cook for 3-4 minutes per side for medium-rare (adjust time for desired doneness). Remove from the skillet and let rest.
Cook the Shrimp: In the same skillet, melt butter and add garlic. Sauté for 30 seconds, then add shrimp and cook for 2-3 minutes per side until pink and opaque.
Assemble and Serve: Slice the steak and serve alongside the Cajun shrimp over a bed of yellow rice. Garnish with fresh parsley and lemon wedges.
