🍋 LEMON VEAL PATTIES 🍋
These veal patties are seared until they are plump and tender, then folded into a rich, lemony sauce. Serve with a little salad, rice or roast potatoes for a fabulous dinner any night of the week! ✨️
RECIPE - 17 Patties
Ingredients 🛒
500g/1.1lb Minced Veal
250g/8.8oz Finely Shredded Potatoes
1 Large Egg
1 Garlic Clove, minced
3 Tbsp Chopped Fresh Parsley
1 Tsp Lemon Zest
Salt & Pepper
1/4 Cup Olive Oil
2 Rosemary Sprigs
Plain Flour for coating
Lemon Sauce:
2 Tbsp Unsalted Butter
3 Cloves Garlic, minced
3/4 Cup Chicken Stock
4 Tbsp Lemon Juice
2 Tsp Honey
Chopped Fresh Parsley for garnish
Method:
In a large bowl, add the minced veal, shredded potato, lemon zest, minced garlic, parsley, egg and season with salt and pepper. Stir together and continue to mix well with your hands.
Form into balls then slightly press down to form a pattie, then coat in flour and set aside.
In a skillet, heat the olive oil and add 2 sprigs rosemary. On medium hear, sear the patties on both sides and remove from pan. Discard the rosemary.
Wipe the pan clean. Add the unsalted butter and minced garlic and cook for a few minutes, just until fragrant.
Add the chicken stock, lemon juice and honey. Simmer for a few minutes then return patties to the pan with their juices. Gently cook for a few minutes, spooning the sauce over the patties, until fully cooked through.
