Ingredients:

- 1 cup cooked quinoa or brown rice
- 2 cups fresh baby spinach
- 1 avocado, sliced
- ¼ cup pumpkin seeds (optional)
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 teaspoon maple syrup
- 2-3 tablespoons water (to thin tahini dressing)

Directions:
