Total Time: 1 hour 15 minutes
Ingredients
For the Curry
1.5 lbs beef chuck, cut into 1-inch pieces
2 tablespoons vegetable oil
1 onion, chopped
3 cloves garlic, minced
1 tablespoon ginger, minced
2-3 tablespoons Massaman curry paste (adjust to taste)
1 can (13.5 oz) coconut milk
2 cups beef broth
2-3 potatoes, peeled and cubed
1 cup carrots, sliced
1/2 cup roasted peanuts, unsalted
2 tablespoons fish sauce
1 tablespoon tamarind paste (or lime juice)
1 tablespoon brown sugar
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
For Serving
Steamed jasmine rice
Instructions
Prepare the Beef
Brown the Beef: In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Add the beef pieces and brown on all sides. Remove the beef from the pot and set aside.
Make the Curry
Sauté Aromatics: In the same pot, add chopped onion, garlic, and ginger. Sauté for about 3-4 minutes until the onion is soft and translucent.
Add Curry Paste: Stir in the Massaman curry paste and cook for another minute to release the flavors.
Combine Ingredients: Return the browned beef to the pot. Pour in the coconut milk and beef broth. Add potatoes, carrots, roasted peanuts, fish sauce, tamarind paste, and brown sugar. Stir to combine.
Simmer
Cook the Curry: Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1 hour, or until the beef is tender and the flavors meld together. Stir occasionally and add water if the curry becomes too thick.
Season and Serve
Adjust Seasoning: Taste the curry and adjust seasoning with salt, pepper, or additional fish sauce and sugar if needed.
Plate: Serve the beef massaman curry over steamed jasmine rice, garnished with fresh cilantro.
Tips and Variations
Add Vegetables: Feel free to add other vegetables like bell peppers or green beans for extra nutrition.
Spice Level: Adjust the amount of curry paste according to your heat preference.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
