Honey Lime Coconut Curry Chicken

Chicken: 1/4 cup oil
2 limes, zest and juice
2 teaspoons ground cumin
1/4 cup low-sodium soy sauce
2 teaspoons salt
1/4 cup honey
4 teaspoons curry powder
1 cup canned coconut milk
2.5–3 pounds chicken breasts
1/2 cup chopped fresh cilantro

Directions:
1. In a large bowl or Ziploc bag, whisk together oil, lime zest, lime juice, cumin, soy sauce, salt, honey, curry powder, and coconut milk. Add chicken breasts and marinate for at least 1 hour (or up to 24 hours).
2. Remove chicken from marinade and pour marinade into a small saucepan. Bring to a boil over medium-high heat, then reduce to medium and simmer for 10 minutes.
3. Grill or bake chicken at 375°F until fully cooked.
4. Sprinkle with chopped cilantro and drizzle with the cooked marinade before serving.
