For the salmon:
4 salmon fillets (skin-on or skinless) π
1 tbsp olive oil or coconut oil
Salt and pepper to taste
1 tbsp fresh cilantro, chopped πΏ
For the lemongrass coconut glaze:
1 can (13.5 oz) coconut milk π₯₯
1 stalk lemongrass, trimmed and finely chopped πΏ
2 tbsp fish sauce π
1 tbsp lime juice π
1 tbsp brown sugar π―
1 garlic clove, minced π§
1 small red chili, finely chopped (optional, for heat) πΆοΈ
1/2 tsp fresh ginger, grated πΏ
π₯ Instructions:
1. Prepare the salmon π
Preheat your oven to 375Β°F (190Β°C).
Pat the salmon fillets dry with paper towels. Rub them with olive oil (or coconut oil) and season with salt and pepper.
2. Sear the salmon π
In an oven-safe skillet, heat the olive oil or coconut oil over medium-high heat. Add the salmon fillets and sear them for 3β4 minutes on each side until golden brown. Once seared, remove from heat.
3. Make the lemongrass coconut glaze π₯₯πΏ
In a small saucepan, combine the coconut milk, chopped lemongrass, fish sauce, lime juice, brown sugar, garlic, and ginger. Bring the mixture to a simmer over medium heat and cook for 5β7 minutes, stirring occasionally, until the sauce thickens slightly. Taste and adjust the seasoning as needed (you can add a bit more fish sauce for saltiness or lime juice for tartness). If you like heat, stir in the chopped red chili.
4. Glaze the salmon π―
Once the glaze is ready, pour it over the seared salmon fillets in the skillet, spooning some of the sauce over the top of the fillets. Transfer the skillet to the oven and bake for 8β10 minutes, or until the salmon is cooked through and flakes easily with a fork.
5. Serve it up π΄
Remove the salmon from the oven. Spoon more of the glaze from the skillet over the salmon fillets and garnish with fresh chopped cilantro. Serve with steamed rice, grilled vegetables, or a fresh salad.
