Ingredients:

For the Spicy Tofu:
1 (14 ounce / 400g) block extra-firm tofu, pressed and crumbled or finely diced
1 tablespoon soy sauce (or tamari)
1 tablespoon rice vinegar
1 teaspoon sriracha (or more to taste)
1 teaspoon sesame oil
1 clove garlic, minced
1/2 inch (1.25 cm) ginger, grated

For the Wraps & Noodles:
1 head butter lettuce or romaine lettuce, leaves separated and washed
4 ounces (115g) rice vermicelli noodles
1 carrot, julienned
1/2 cucumber, julienned
1/4 cup (15g) fresh mint leaves, chopped
1/4 cup (15g) fresh cilantro, chopped
2 tablespoons crushed roasted peanuts (optional garnish)
Lime wedges, for serving

For the Dipping Sauce (Nuoc Cham Style - Vegan):
1/4 cup (60ml) warm water
2 tablespoons fresh lime juice
1-2 tablespoons maple syrup or agave nectar (to taste)
1 tablespoon soy sauce (or tamari)
1 small red chili, finely minced (optional)
1 small clove garlic, minced (optional)

Directions:

1. Prepare Dipping Sauce: In a small bowl, whisk together warm water, lime juice, maple syrup (or agave), soy sauce (or tamari), minced chili (if using), and minced garlic (if using). Set aside. Adjust sweetness or tanginess to taste.

2. Cook Rice Noodles: Cook the rice vermicelli noodles according to package directions. Drain, rinse with cold water, and set aside.

3. Marinate & Cook Tofu: In a bowl, combine crumbled or diced tofu with soy sauce, rice vinegar, sriracha, sesame oil, minced garlic, and grated ginger. Let it marinate for at least 10 minutes. Heat a non-stick skillet over medium-high heat. Add the marinated tofu and cook, stirring occasionally, for 8-10 minutes, or until browned and slightly crispy.

4. Assemble Lettuce Wraps: Arrange the lettuce leaves on a platter. To assemble a wrap, take a lettuce leaf, add a small amount of rice noodles, some spicy tofu, julienned carrots, and julienned cucumber.

5. Garnish and Serve: Sprinkle with chopped mint, cilantro, and crushed peanuts (if using). Serve immediately with the dipping sauce on the side and lime wedges for squeezing.
