1 lb chicken breast or thighs, thinly sliced
1 tablespoon cornstarch
1 tablespoon soy sauce (for marinating)
1 tablespoon oil (vegetable or sesame)

1 cup mushrooms, sliced (cremini or button work well)
1/2 onion, sliced
1 bell pepper, sliced (optional)
For the Sauce:
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sugar
1/2–1 teaspoon freshly ground black pepper (to taste)
1/4 cup water or chicken broth
1 teaspoon cornstarch (mixed with 1 tbsp water for slurry)
Instructions:
Marinate the Chicken:
In a bowl, combine sliced chicken with 1 tbsp soy sauce and 1 tbsp cornstarch. Mix and let sit for 10–15 minutes.
Prepare the Sauce:
In a small bowl, mix together:
Soy sauce
Oyster sauce
Sugar
Black pepper
Water or broth
Set aside.
Stir-Fry the Chicken:
Heat oil in a large skillet or wok over medium-high heat.
Add the marinated chicken and cook until browned and cooked through (about 4–5 minutes). Remove from pan and set aside.
Cook the Vegetables:
In the same pan, add a bit more oil if needed. Sauté the onion, mushrooms, and bell pepper for 3–4 minutes until tender.
Combine & Sauce:
Return the chicken to the pan. Pour in the sauce and stir everything together.
Add the cornstarch slurry and cook for 1–2 minutes, until the sauce thickens and coats the chicken and veggies.
Serve:
Serve hot over steamed rice or noodles. Garnish with sliced green onions or sesame seeds if desired.
