⚡️ Monster Energy Bites 🍬
Ingredients:

1 cup old-fashioned oats
½ cup creamy peanut butter
¼ cup honey or maple syrup
¼ cup mini chocolate chips
1 tsp vanilla extract
Pinch of salt
1 tbsp ground flaxseed (optional, for extra nutrition)
24 small candy eyes (such as Mini M&M’s or store-bought edible eyes)
Optional Add-ins:

Chia seeds or hemp hearts for added crunch and nutrients
Crushed graham crackers or crushed cookies for texture
Instructions:

Mix the Base
In a medium bowl, combine oats, peanut butter, honey, vanilla, salt, and flaxseed (if using). Stir until everything is well incorporated. If the mixture feels too dry, add a splash more honey or a few drops of water.
Fold in Mix-ins
Stir in the mini chocolate chips (or any optional add-ins like chia seeds or crushed graham crackers) until evenly distributed throughout the mixture.
Form the Bites
Scoop out tablespoon-sized portions and roll each into a ball using your hands. Place the balls on a lined baking sheet or plate.
Chill to Set
Cover the bites and refrigerate for at least 30 minutes to firm up and lock in flavor.
Add Monster Eyes
Once chilled, gently press 1–2 candy eyes into each bite to create a fun monster face. Arrange them on a serving tray for a festive touch.
Store and Serve
Keep the energy bites in an airtight container in the fridge for up to one week, or freeze for longer storage. Serve chilled or at room temperature.
