Creamy Cajun Chicken and Garlic Parmesan Rice
Ingredients:
1 lb boneless skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
1 tbsp Cajun seasoning (adjust to taste)
1 tsp garlic powder
1/2 tsp smoked paprika
Salt and black pepper to taste
2 cups chicken broth
1 cup heavy cream
1 cup long-grain white rice, uncooked
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tbsp butter
1/4 cup chopped green onions or parsley (for garnish)
Directions:
In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Add the chicken to the skillet and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the butter and garlic. Sauté for about 1 minute until the garlic is fragrant. Stir in the chicken broth and heavy cream, bringing it to a simmer. Add the uncooked rice to the skillet, and stir to combine. Reduce the heat to low, cover, and cook for about 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
Once the rice is cooked, add the cooked chicken back into the skillet and stir in the grated Parmesan cheese. Continue cooking for 2-3 minutes until everything is well combined and creamy. Adjust seasoning with salt and pepper if needed.
Garnish with chopped green onions or parsley before serving.
