🥥 Coconut Rice
• 1 cup jasmine rice
• 1 cup coconut milk
• 1 cup water
• ½ tsp salt
🍈 Papaya Cucumber Mint Salad
• 1 cup ripe papaya, diced
• ½ cup cucumber, thinly sliced
• 1 tbsp fresh mint, chopped
• Juice of ½ lime
• Pinch of salt
• Optional: chili flakes for heat

• ¼ cup mayo
• 1 tsp honey
• 1–2 tsp sriracha or chili garlic sauce

🔥 Instructions
1. Cook the Coconut Rice
• Rinse rice. Combine with coconut milk, water, and salt in a saucepan.
• Bring to a boil, reduce to low, cover, and simmer 15 mins.
• Turn off heat, let sit covered for 5 mins, then fluff.
2. Grill the Salmon
• Toss salmon cubes with olive oil, garlic powder, paprika, salt & pepper.
• Grill or sear for 2–3 mins per side until golden and just cooked through.
• Squeeze lime over while hot.
